SUBMITTEDUpdated with Victoria Fausnaught’s hometown and Amy Fausnight’s status with chiropractic business.
Ron and Amy Fausnaught are no strangers to the restaurant business.
Now they plan to use their business acumen to expand into the breakfast, brunch and lunch game by opening an Eggs Up Grill in Murfreesboro, the first of 10 locations of the popular restaurant chain they plan to open in the greater Nashville area.
The husband-and-wife team owns LJSweets, LLC, which operates two Crumbl Cookies franchises, one in Murfreesboro and one in Hendersonville.
Ron and Amy are originally from California but have called Murfreesboro home for the past 20 years. Ron has owned a chiropractic practice for the past 22 years. Amy previously worked in the pastry business and was a AAA travel agent for 10 years while also co-owning the chiropractic business.
The couple founded LJSweets in 2018.
Victoria Fausnaught, the couple’s daughter-in-law and chief operating officer of LJSweets, said they are still looking for the perfect real estate for the new restaurant. She said she hopes to open the Murfreesboro location within a year.
“We want to make sure people can get up and go get breakfast and not have to trek across town,” the Murfreesboro resident said.
The family loves breakfast and has been interested in opening a breakfast restaurant for years.
“We fell in love with Eggs Up Grill because of the bright and friendly atmosphere and the simple food that is priced well for families and offers something for everyone,” Amy said in a news release. “We really like the focus on making people smile, and we just love breakfast and have always wanted to own a breakfast concept and Eggs Up Grill checked all of the boxes.”
Ricky Richardson, chief executive officer of Eggs Up Grill, said the Fausnaughts, who were first introduced to the restaurant chain as guests, were a natural fit for the brand.
“There was a lot of shared values,” Richardson said. “The brand fit, and their successes as business owners appealed to us.”
Richardson said the number of Eggs Up Grill locations has doubled in the past two years. By the end of this year, the company will have 60 restaurants across the Southeast, with commitments for more than 150 restaurants in total.
Victoria said what sold her was the people behind the brand.
“When we met Ricky and the team, it solidified my belief in the brand,” said Victoria. “There’s a real sense of community within the corporate structure, and just an overall great attitude.
“It’s not just a company.”
