Healthy and simple side dishes are sometimes tough to find.
We spend most of our time on the main dish, which often means the sides just aren't quite as exciting.
So, here is a recipe that is still quick and easy, but it will add great flavor and color to your table.
One of my favorite side items is sweet potatoes.
I love the dense, slightly sweet texture, the variety of uses they have, and of course, how good they are for us. In my opinion, they are quite possibly the perfect food.
These sweet potato fries have a mild spicy, sweetness with warmth from the cinnamon.
I actually make these almost once a week at my house.
Oh, and the best part: no peeling required.
Sweet potato fries
3 medium sweet potatoes, rinsed and cut into fries
1 1/2 Tablespoons extra virgin olive oil
1/2 teaspoon cinnamon
1/2 teaspoon paprika
1/8 teaspoon ground cayenne pepper
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1/2 Tablespoon brown sugar
1. Preheat oven to 425 degrees.
2. Drizzle fries with olive oil.
3. Mix the spices together and toss with your hands to coat potatoes.
4. Bake for 10 minutes, and then toss and bake for another 5-8 minutes, or until “crispy.”
