New Lightning cookies a win-win for university

MTSU’s mascot Lightning now has his own treat.

His delectable cookies, sold in a variety of flavors, are for sale at MTSU home football games this season.

The cookies, some of which are shaped like a lightning bolt and bear the university’s athletic logo, were the brainchild of candy maker Kathy Wilson.

A full-time court reporter, Wilson has owned and operated The Pbb Fctry, a peanut butter ball wholesaling company, for more than three years.

“Lightning didn’t have a product of his own,” she said. “I thought it would be a good product especially for kids.”

Wilson developed the concept more than two years before pitching it to MTSU officials.

“I want the fans and supporters to be very proud of them,” she said.

Publicity materials sent out about Lightning’s Cookies say the cookies honor the winged-horse for “his dedication and support for the Blue Raiders.”

Ten percent of all of the proceeds from the sale of Lightning’s Cookies go to the Blue Raider Athletic Association.

Alan Farley, MTSU associate athletic director, said the cookies are a “win-win” for Wilson and for MTSU.

“It is a unique method to reach out to folks promoting Middle Tennessee,” he said.

Cookies can be ordered in platinum or blue tins or purchased individually at football games. Flavors include sugar, snicker doodle, chunky chocolate chip, raisin and peanut butter.
