Who doesn't love chocolate covered strawberries? That combo is a match made in heaven, and so I decided to use that idea to make these moist muffins.
These adorable pink treats are sure to be a hit with the kids with their pretty pink color and bits of chocolate. When I was growing up I used to love when my mom would make muffins, I could smell them baking even before I came downstairs, and it was just always a special treat.
As tempting as it is to use the muffin mixes, I think you will be surprised at how easy and quick making them from scratch really is. There is no mixer required for these muffins, and the best part is, I get to control what goes into them.
By using the strawberry Greek yogurt, you can leave out some of the oil or butter in most recipes while getting a more intense strawberry flavor.
These would make a delicious after school snack, on the go breakfast, or light dessert.

Strawberry chocolate chip muffins
• 1 cup flour
• 1/4 teaspoon salt
• 1/4 tsp baking powder
• 1/4 tsp baking soda
• 1/3 cup sugar
• 2 tbs oil
• 3 tbs milk
• 1 egg
• 5 ounce container strawberry greek
• 2-3 drops Red Food Coloring (optional)
• 1/2 cup chopped fresh or frozen (do not thaw) strawberries
• 1/4 teaspoon vanilla extract
• 3 tbs chopped chocolate or mini chocolate chips
Makes 8 muffins
Preheat the oven to 350 degrees.
In one bowl mix together the flour, baking soda, baking powder, and salt. In a separate bowl, whisk together the oil, milk, egg, yogurt, vanilla and food coloring.
Stir the dry ingredients into the wet ingredients. Then stir in the strawberries and chocolate. Spray a muffin tin and fill 3/4 full with the batter. Bake for 20-22 minutes until toothpick comes out clean. Cool for five minutes and enjoy.
