From the Junior League's Cookbook
Chicken Quesadillas 1 ½ to 2 pounds boneless chicken, cut into strips 2 tablespoons olive oil 1 garlic clove, minced 1 green bell pepper, chopped 1 (12 ounce bottle salsa) 6 ( 6-inch) flour tortillas 2 cups shredded Monterey Jack cheese Sauté’ the chicken in the olive oil in a skillet. Add the garlic and bell pepper. Cook for 5 minutes or until the chicken is no longer pink. Stir in the salsa. Cook until heated through. Layer the tortillas, chicken mixture and cheese ½ at a time in a greased 9 x 13 inch baking dish. Bake, covered, at 350 degrees for 30 minutes. Yields: 8 servings Kool-Aid Finger Paint (Non-edible) 2 cups flour 2 packages unsweetened Kool-Aid drink mix, any flavor ½ cup salt 3 cups boiling water 3 tablespoons vegetable oil Paper Combine the flour, drink mix, salt, water, and oil in a bowl. Let children use it on paper as finger paint. NOTE: This is a non-edible craft. Yield: Approximately 5 cups |
