Chicken tender love for grown-ups

Chicken tenders were my go-to order at any almost any restaurant when I was a kid.  

They were crunchy and moist, and I could dip them into my favorite condiments and sauces.

Nowadays, I don’t order chicken tenders very often because they are deep-fried and usually come with French fries, which are too hard for me to resist once they are on my plate.

However, I still get an occasional craving for my beloved tenders, so I decided to make my own version.

These are baked, but I use a special coating process to create the crispiness on the outside. Panko breadcrumbs are really coarse, dry crumbs that are perfect for fake frying, and they can be found in most grocery stores near the regular breadcrumbs.

And don’t worry. I didn’t forget the best part of eating these chicken tenders, a homemade honey mustard dipping sauce that so easy to make.

Crispy Baked Chicken Tenders

Serves 4-6
From start to finish: 30 minutes

Ingredients:
1.5 pounds boneless skinless chicken breast, cut in tenders
2 Tablespoons all purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1 egg
2 teaspoon Worcestershire
2 teaspoon dijon mustard
3/4 cup Panko breadcrumbs
1/4 cup grated parmesan cheese
cooking spray

Directions:
1. Preheat oven to 400 degrees, and place a cooking rack on top of a baking sheet and spray it with cooking spray.
2. Place the chicken tenders in a large Ziploc bag along with flour, salt and pepper, and shake until it is well coated.
3. In shallow dish or bowl, whisk together the egg, Worcestershire sauce, dijon mustard, and 1 tablespoon of water.
4. In another dish, combine the Panko breadcrumbs and parmesan.
5. Dredge the flour coated tenders in the egg mixture, then in the Panko mixture by pressing crumbs into the chicken to ensure they stick, and place on baking sheet.
6. Once all of the chicken tenders are coated, spray thoroughly with cooking spray, and bake for 15 minutes.

Homemade Honey Mustard Sauce

(recipe is doubled from the video to feed 4)

Ingredients:
1/2 cup light mayonnaise
2 Tablespoon dijon mustard (or regular)
1 Tablespoon honey
pinch of salt and pepper

Directions:
Combine and stire all of the ingredients together and serve with the chicken tenders.
